||Place hot rice into a large bowl or a Hangiri (wooden Japanese bowl used for preparing sushi rice.)
||For each cup of cooked rice, use 1 tablespoon of sushi rice vinegar.
||While the rice is still hot, lightly pour sushi rice vinegar over all of the steamed rice.
||Mix the sushi rice vinegar with rice paddle using a side slicing motion, every kernel of your sushi rice should be covered with rice vinegar.
||Place a towel over your sushi rice and let cool to room temperature.
