Wagyu Rice Burger

Ingredients (Serves 4)
  • 3 cups cooked Tamaki Rice
  • 1 stalk green onion
  • 1/4 white onion
  • 1 tbsp soy sauce
  • 2 oz shabu-shabu meat (Wagyu beef)
  • Choice of greens (arugula, lettuce, etc.)
  • Sweet miso barbecue sauce:
            - 2 tbsp miso
            - 1 tbsp mirin (sweet cooking sake)
            - 1 tbsp water
  • Salt and pepper

  • Preparation
    Rice Buns
    1. Roll out 8 pieces of saran wrap (about 10 in).
    2. Divide rice evenly onto the wrap.
    3. Cover the rice with the saran wrap and mold into tight balls.
    4. Flatten the balls into round buns and unwrap.
    5. Brush one side of the rice bun with soy sauce and carefully place each rice bun onto the grill, making sure the side brushed with soy sauce is placed down.

    Let sit for about 5-7 minutes, or until a deep, golden brown.


    Brush soy sauce onto both sides of the rice bun and set aside.

    Wagyu Filling
    1. Cut white onion into thin slices (about 1/4 in. wide)
    2. Cut green onions into 1 in. pieces.
    3. Add a little cooking oil and cook shabu-shabu meat, green onions, and white onion, stirring for 4 minutes.
    4. Add in miso barbecue sauce, stir for 1 minute then remove from heat.
    5. Put the cooked wagyu filling on the rice buns and top with your choice of greens.
